Crabmeat and Creamcheese Upside Down Lollipops
We start with a Dare round biscuit which we top with spicy seafood sauce, then with canned crabmeat, and finally with a ball of goat’s cheese (rolled). To create the ‘lollipop’ look we skewer it with a plexi skewer.

Crabmeat and Cream Cheese Upside Down Lollipops
Makes 12
1 – 220g Can of Crab Meat
1 – 250g (Small Log) Plain Goat Cheese
6 – tsp of Seafood Sauce
12 – Each Dare Round Biscuit
12 – Plexiglas Skewers
Remove the goat cheese from the refrigerator and leave aside until soft. This will take about 30 minutes.
Carefully open the crabmeat can and drain all the excess juices from the meat.
In a small mixing bowl add the crabmeat and cheese and blend with a spoon until all the ingredients are well mixed.
With a teaspoon divide the mix into 12 piles on a chopping board or clean work surface.
With clean hands place each pile one by one on to the palm of your hand and with a circular motion create mini goat cheese balls.
Once all twelve balls are complete, place into the refrigerator for 10 minutes to chill.
Remove the cheese balls from the refrigerator and skewer them in the center. Place skewers on to a plexi glass round.
Finally carefully place the Dare cracker on top of the cheese ball and finish with a small amount of seafood sauce.
