Skewers Like Never Before
A selection of three types of skewers (shrimp, beef, and vegetable) served with three distinct dipping sauces.

* Pair the skewers with the following Bombay Sapphire cocktail recipes:

Yield – 6 skewers of each type – 18 total

Ingredients

Beef (w/ pesto dip)

24oz. beef tenderloin in 1” cubes
Sea salt and fresh ground black pepper
2 tbsp. extra virgin olive oil
½ cup pesto

Shrimp (w/ sweet potato mayo)

18 – Pre-cooked black tiger shrimp, peeled and deveined, tails removed
1 tsp. sesame oil
2 tbsp. chopped chives
1 tsp. fresh grated ginger
1 tsp. each toasted black and white sesame seeds
2 tbsp. sweet chili sauce
1 tsp. soy sauce
1 cup sweet potato mayonnaise (flesh of one yam roasted and blended with equal parts mayonnaise – seasoned to taste)

Vegetable (w/ hummus)

2 red pepper
1 green pepper
1 large red onion
2 green zucchini
18 cremini mushrooms
2 tbsp. extra virgin olive oil
2 tbsp. balsamic vinegar
1 tbsp. crushed garlic
4 basil leaves chopped
salt and pepper
1 cup hummus





Beef
Toss beef in oil and seasoning and skewer.
Preheat nonstick pan and cook meat on all sides, ensuring inner pieces are fully brown, and finish in 400F oven if necessary.

Shrimp
Allow shrimp to thaw in refrigerator overnight or under running cold water.
Toss shrimp in remaining marinade and skewer 3 per brochette.

Vegetable
Preheat oven to 400F.
Cut all vegetables into equal sized pieces.
Blend vegetables with oil, vinegar, basil and seasoning and skewer alternating types of vegetables for colourful presentation.
Roast in oven on lined baking sheet for 15 minutes or until skewers start to show colour.





Beef - Present with pesto for dipping.

Shrimp - Present with sweet potato mayonnaise.

Vegetable - Present with hummus for dipping.
